Bourbon Bacon Jam

Ingredients

  • 6 oz. chopped bacon
  • 1 small red onion, chopped
  • 2 garlic cloves, chopped
  • 1/3 cup cider vinegar
  • 2 tbsp. brown sugar
  • 2 tbsp. bourbon
  • 2 tbsp. water
  • Black pepper

Directions

  1. Saute bacon in a large skillet over medium heat, stirring occasionally, until crisp, 15 minutes. Add onion and garlic; saute until tender, 5 minutes. Add vinegar, brown sugar, bourbon and water; simmer until the liquid is almost evaporated, about 15 minutes. Season with pepper.
