Ingredients
- 2 cups all-purpose flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. ground cinnamon
- 1/4 cup shortening
- 1/4 cup butter, at room temperature
- 3/4 cup granulated sugar
- 2 eggs
- 2 ripe bananas, mashed
- 1/4 cup buttermilk
- 1 tsp. vanilla
Directions

Heat oven to 350 degrees.

In a large bowl sift together flour, salt, baking powder, baking soda and cinnamon; set aside.

In a large mixing bowl cream together the shortening, butter and sugar. Add eggs, bananas, buttermilk, and vanilla and beat until thoroughly mixed. Add dry ingredients gradually, beating after each addition.

Drop by heaping teaspoonfuls into wells of a whoopee pie pan or on lightly greased and floured baking sheet spaced at least 2 1/2 inches apart.

Bake 8 to 10 minutes, or until cookies spring back when lightly touched. Remove to wire rack to cool.
