Banbury Tarts

Ingredients

  • 1/4 cup chopped raisins
  • 1/4 cup chopped dates
  • `1/4 cup chopped figs
  • 1/4 cup chopped nuts
  • 1 cup brown sugar
  • 1 Tbsp. flour
  • 1 egg, slightly beaten
  • 2 Tbsp. lemon juice
  • 1 Tbsp. grated lemon rind
  • 1 plain pie crust pastry

Directions

  1. Combine first 7 ingredients and cook slowly for 10 minutes, stirring constantly. Remove from heat and stir in lemon juice and rind. Cool.

  2. Roll pastry to 1/8 inch thick and cut into 3 inch squares. Place 2 tsp. of filling on each square, moisten edges and fold over, making 3 cornered tart. Pinch edges together, make 3 short slits in top.

  3. Bake in hot oven (425 degrees) about 20 minutes.

  4. makes 12 tarts

  5. Variation: Use puff pastry instead of plain pastry. Add 1/4 cup each chopped candied cherries and pineapple to filling.
