Bang Bang Turkey Salad

Ingredients

  • Sauce:
  • 2 tsp. peanut oil
  • 3 Tbsp. peanut butter
  • 1/2 to 1 Tbsp. light brown sugar
  • 1 Tbsp. soy sauce
  • 1/2 tsp. balsamic vinegar
  • chili bean or chili garlic sauce, sambal oelek, red or green curry paste, seeded and minced serrano chili pepper or hot red pepper sauce to taste
  • 2 to 4 Tbsp. hot water, as necessary
  • Salad:
  • Watercress leaves or shredded iceberg lettuce
  • 1 large cucumber, (seedless)
  • 1/2 cup finely chopped fresh cilantro
  • 1/2 cup finely chopped fresh mint
  • 3 cups cold cooked shredded or chopped turkey or chicken
  • 2 scallions (white and green parts), thinly sliced
  • Coarse chopped or crushed peanuts

Directions

  1. To make the sauce:

  2. In a bowl using a whisk or fork, mix together the oil, peanut butter, sugar, soy sauce, vinegar and if desired, chili or curry sauce, or chili pepper until combined. Add hot water and mix until smooth and somewhat thickened paste. Taste and adjust ingredients. (May cover and refrigerate for several days.)

  3. To make salad:

  4. Arrange watercress or lettuce among individual plates. Divide cucumber, cilantro and mint among plates, mounding them slightly in center. Top with turkey and drizzle with sauce. Top with scallions and peanuts. Pass any remaining sauce at the table.
