Ingredients
- 1 cup strong, brewed black tea, cooled
- 4 Tbsp. marmalade or apricot jam
- 1 cup mixed dried fruit, golden raisins, apricots and cranberries
- 1 cup brown sugar
- 3 cups flour
- 4 1/2 tsp. baking powder
- 1 1/2 tsp. salt
- 2 beaten eggs
- 1/2 tsp. cinnamon or a good pinch mixed spice *
Directions

Soak the mixed fruit with marmalade in the tea for at least an hour, but can be left overnight. Add the other ingredients, mix well and put into a large greased loaf tin ( 9 × 5 inch). Bake for 1 1/2 hour at 300 degrees.

Leave to cool and eat as is or with unsalted butter.

*According to the source, “mixed spice” includes coriander seed, cinnamon, caraway seed, cassia, nutmeg, ginger and cloves. Just cinnamon works fine though.
