Barbara’s Candied Sweet Potatoes

Ingredients

  • 2 lb. sweet potatoes (about 6 medium)
  • 1/2 cup packed brown sugar
  • 3 Tbsp. butter OR margarine
  • 3 Tbsp. water
  • 1/2 tsp. salt

Directions

  1. In a large saucepan, heat enough salted water (1/2 tsp. salt to each cup water) to cover potatoes. Add sweet potatoes, whole and unpeeled. Cover and heat to boiling.

  2. Reduce heat and simmer until tender, 30 to 35 minutes. Drain and cool slightly. Slip off and discard skins; cut potatoes into 1/2-inch slices.

  3. In an 8-inch skillet over medium-high heat, add brown sugar, butter, water and salt; cook, stirring constantly, until smooth and bubbly. Add sweet potato slices; stir gently until glazed and hot.
