Ingredients
- 1 pie crust (homemade or bought)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup heavy cream of evaporated milk
- 2 egg yolks, beaten
- 2 Tbsp. butter
- 1/2 tsp. vanilla
- 1/8 tsp. salt
- 2 egg whites, beaten
- nutmeg
Directions

Line pie pan with pastry.

Cook next 5 ingredients in top of double boiler until thickened, stirring constantly. Remove from heat, add vanilla, salt and egg whites. Pour into pastry shell, sprinkle with nutmeg.

Bake in hot oven (425 degrees) 10 minutes, reduce temperature to slow (300 degrees) and bake about 45 minutes longer or until knife inserted in center comes out clean. Serve very cold.

Variations:

Omit pastry and use Brazil-nut Pie Shell.

Date- Add 1 cup chopped dates and reduce granulated sugar to 1/4 cup. Omit nutmeg and increase vanilla to 1 tsp.

Nut-Add 1 cup broken nut meats to filling.
