Barbecue Beef Biscuit Cups

Ingredients

  • Biscuit cups:
  • 2 cups Bisquick or other baking mix
  • 1/2 cup cold water
  • Filling:
  • 1 lb. ground beef
  • 1 large onion, peeled, chopped
  • 1 clove garlic, peeled, crushed, optional
  • 1/2 cup barbecue sauce
  • 1/2 cup shredded cheddar cheese

Directions

  1. Heat oven to 400 degrees.

  2. to make the biscuit cups: In a large bowl, combine baking mix and water and mix until a soft dough forms. Beat vigorously 20 strokes.

  3. Drop dough by teaspoonfuls into 12 ungreased muffin cups. With floured hands, press dough on bottom and up sides of muffin cups.

  4. To make the filling: In a 10-inch skillet over medium heat, cook ground beef, onion and garlic until beef is brown. Drain.

  5. Spoon beef mixture into muffin cups. Sprinkle with cheese. Bake until crust is golden brown, about 15 minutes.
