Fried Dill Pickles

Ingredients

  • 1/4 cup cornmeal
  • 1/4 cup cornstarch
  • Pinch cayenne
  • 24 dill pickle chips
  • 1 tsp. cornstarch
  • 1 egg, lightly beaten
  • Vegetable oil, for frying

Directions

  1. Whisk cornmeal and cornstarch with a pinch of cayenne. Toss pickle chips with 1 tsp. cornstarch; dip in egg, then dredge in the cornmeal. Fry in 2 inches 375 degree vegetable oil until golden, about 3 minutes. Remove with a slotted spoon and drain on a rack.
