Charred Corn and Tomatoes

Ingredients

  • 1 ear corn
  • 3/4 cup grape tomatoes
  • 2 tbsp. olive oil
  • Salt and pepper
  • 1 tbsp. rice vinegar
  • 1 scallion, sliced
  • 1/2 tbsp. chopped mint
  • 1/2 tbsp. chopped cilantro

Directions

  1. Cut off the kernels from corn; toss with tomatoes and olive oil on a rimmed baking sheet and season with salt and pepper. Broil, stirring occasionally, until charred and tender, 5 minutes. Let cool. Combine with vinegar, scallion, mint and cilantro.
