Ingredients
- 1 ear corn
- 3/4 cup grape tomatoes
- 2 tbsp. olive oil
- Salt and pepper
- 1 tbsp. rice vinegar
- 1 scallion, sliced
- 1/2 tbsp. chopped mint
- 1/2 tbsp. chopped cilantro
Directions

Cut off the kernels from corn; toss with tomatoes and olive oil on a rimmed baking sheet and season with salt and pepper. Broil, stirring occasionally, until charred and tender, 5 minutes. Let cool. Combine with vinegar, scallion, mint and cilantro.
