Mustard Beer Cheese

Ingredients

  • 1/3 cup beer
  • 1 tbsp. butter
  • 1 tsp. mustard powder
  • Pinch of salt and pepper
  • 6 oz. grated white cheddar
  • 1 egg yolk
  • 1 tbsp. grainy mustard

Directions

  1. Heat beer with butter, mustard powder and salt and pepper in a small saucepan over medium-low heat until steaming. Gradually whisk in cheese until smooth. Whisk in egg; cook, whisking until thickened, 2-4 minutes. Remove from the heat and stir in mustard.
