Sausage and Peppers

Ingredients

  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 2 hot Italian sausages, casings removed
  • 2 tbsp. red wine
  • 1 cup marinara sauce
  • 1/4 tsp. dried oregano
  • 2 tbsp. chopped parsley

Directions

  1. Saute pepper, onion and garlic in olive oil, 5 minutes. Add crumbled sausage and brown, 3 minutes. Add red wine and simmer until liquid evaporates. Add marinara sauce and oregano. Simmer until thickened, 3 minutes. Stir in chopped parsley.
