Ingredients
- 1 onion, peeled and halved
- 3 cloves garlic, peeled
- 1 stick celery
- 1 carrot, washed but not chopped
- thyme
- bay leaf
- 5 black peppercorns
Directions

Put in a large pot

Add cold water

Bring to the boil slowly

Simmer for one hour

Strain and push any liquid out of the vegetables with the back of a spoon

Drink while hot or boil down and freeze as vegetable stock
