Ingredients
- 1 tbsp. unsalted butter
- 2 tsp. kosher salt, divided
- 4-5 lb. whole chicken, cut into 8 pieces
- 1/4 cup all-purpose flour
- 1/4 cup quick-mixing flour
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 1/8 tsp crushed red pepper
- White Barbecue Sauce (see recipe)
Directions

Preheat oven to 425. Place butter in a 13×9-inch baking dish, and place dish in oven to preheat for 10 minutes.

Sprinkle 1 tsp. salt all over chicken pieces. In a shallow dish, whisk together flours, onion powder, garlic powder, all pepper and remaining 1 tsp. salt. Dredge chicken in flour mixture, shaking off excess. Carefully place chicken, skin side down, in an even layer in hot dish.

Bake for 10 minutes. Turn chicken, and bake until a thermometer reads 165 and skin is golden brown and crisp, about 20 minutes more. Let stand for 5 minutes; serve with White Barbecue Sauce.
