Ingredients
- 3 lbs. new potatoes, quartered
- 3 1/2 tsp. kosher salt, divided
- 1 lb. green beans, trimmed and cut into 1-inch pieces
- 1/3 cup olive oil
- 2 1/2 tbsp. apple cider vinegar
- 1 tbsp. Dijon
- 1 tbsp. whole-grain mustard
- 1/2 tsp. black pepper
- 1/2 lb. bacon, cooked and crumbled

In a large Dutch oven, bring potatoes, 3 tsp. salt and water to cover to a boil over medium-high heat. Reduce heat, and simmer for 10 minutes. Add beans; cook until vegetables are tender, 2-4 minutes more. Drain well.

In a large bowl, whisk together oil, vinegar, all mustard, pepper and remaining 1/2 tsp. salt until well combined. Gently stir in potatoes, green beans and bacon until well combined. Serve immediately.
