Barbecue Chili Pie

Ingredients

  • 1 refrigerated pie crust
  • 1/2 medium onion, minced
  • 3 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 1 (14 1/2 oz.) can tomatoes with jalapeno peppers
  • 1 (14 1/2 oz.) can chili beans, drained
  • 1 to 1 1/2 lbs. cooked, leftover barbecued pulled pork
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • salt to taste
  • 1/2 cup sour cream, for serving

Directions

  1. Prepare pie crust according to package instructions; set aside.

  2. Saute onions and garlic in olive oil until onion is beginning to soften. Stir in remaining ingredients except sour cream and cook at a low simmer for 30 to 40 minutes. Remove from heat. Pour into prepared crust.

  3. Heat oven to 325 degrees. Bake 30 minutes. Let stand 10 minutes before slicing. Serve each slice with a dollop of sour cream.
