Barbecue Joint Potato Salad

Ingredients
- 3 1/2 lbs. waxy potatoes, scrubbed (do not use russets)
- 1 tsp. garlic powder
- 1 tsp. ground black pepper
- 1 tsp. fried parsley
- 1 tsp. salt
- 1 tsp. ranch dressing mix
- 1 cup crumbled fried bacon
- 1/2 cup finely chopped green onions (white and green parts)
- 1/4 cup minced fresh chives
- 2 1/4 cup sour cream
- 1 3/4 cups mayonnaise
Directions

Heat oven to 400 degrees.

Bake potatoes for about 1 hour or until cooked through. Let cool slightly, then cut into cubes or slices.

In a small bowl, combine the garlic powder, black pepper, parsley, salt and ranch dressing mix.

Place potatoes in a large bowl and seasoning mixture, tossing gently to coat. Stir in bacon, onion and chives.

In a separate bowl, combine the sour cream and mayonnaise. Add to potato mixture and mix well. Cover and refrigerate everal hours before serving.
