Barbecue Joint Potato Salad

Ingredients

  • 3 1/2 lbs. waxy potatoes, scrubbed (do not use russets)
  • 1 tsp. garlic powder
  • 1 tsp. ground black pepper
  • 1 tsp. fried parsley
  • 1 tsp. salt
  • 1 tsp. ranch dressing mix
  • 1 cup crumbled fried bacon
  • 1/2 cup finely chopped green onions (white and green parts)
  • 1/4 cup minced fresh chives
  • 2 1/4 cup sour cream
  • 1 3/4 cups mayonnaise

Directions

  1. Heat oven to 400 degrees.

  2. Bake potatoes for about 1 hour or until cooked through. Let cool slightly, then cut into cubes or slices.

  3. In a small bowl, combine the garlic powder, black pepper, parsley, salt and ranch dressing mix.

  4. Place potatoes in a large bowl and seasoning mixture, tossing gently to coat. Stir in bacon, onion and chives.

  5. In a separate bowl, combine the sour cream and mayonnaise. Add to potato mixture and mix well. Cover and refrigerate everal hours before serving.
