Barbecue meatball Pie

Ingredients

  • 1 double-crust pastry, frozen or homemade
  • 1 egg
  • 1 lb. lean ground beef
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 cup quick-cooking rolled oats
  • 1 cup (1/4-inch cubes) American cheese
  • 4 drops liquid smoke, if desired.
  • Tomato Sauce:
  • 8 oz. can stewed tomatoes
  • 7 oz. can whole kernel corn with sweet peppers, drained
  • 2 Tbsp. flour
  • 1 tsp. instant minced onion
  • 2 Tbsp. barbecue sauce

Directions

  1. Combine egg, ground beef, salt, pepper, oats, cheese and liquid smoke. Form into 18 small meatballs.

  2. Place in 9-inch pastry-lined pie pan. Top with Tomato Sauce. Roll out remaining pastry. Cut into 3-inch rings. Place around edge of pie.

  3. Bake at 425 degrees for 10 minutes, then at 375 degrees for 35 to 45 minutes until crust is golden brown. Let stand 5 to 10 minutes before serving.

  5. Combine tomatoes, corn, flour, onion and barbecue sauce; mix well.
