Barbecue Porky Joes

Ingredients

  • 1 lb. pork loin cutlets (or other lean cut of pork)
  • 1 Tbsp. canola oil
  • 1 medium yellow onion, diced
  • 1 green bello pepper, cored and diced
  • 1 cup prepared barbecue sauce
  • 4 hamburger buns

Directions

  1. Place the pork in the bowl of a food processor. Pulse the pork in short bursts until well chopped, but not finely ground.

  2. In a large skillet over burner set on medium-high, heat the oil. Add the onion and pepper and saute for 6 minutes. Add the pork and saute until lightly browned and cooked through, about 8 minutes. Remove the skillet from heat. Stir in the barbecue sauce, then serve on the buns.
