Barbecued Pheasant

Ingredients

  • 4 pheasant or fryers
  • 1 Tbsp. salt
  • 1 Tbsp. pepper
  • 1 stick oleo
  • 1/2 cup vinegar
  • 1 Tbsp. celery salt
  • 2 Tbsp. dry mustard
  • 1/2 cup tomato sauce
  • juice of 1 lemon
  • 1/4 Tbsp. hot sauce
  • 1 quart water
  • 1/4 cup brown sugar
  • 1 Tbsp. garlic salt
  • 1 Tbsp. Worcestershire sauce

Directions

  1. Combine all ingredients, except pheasant, in a saucepan and hat just to warm.

  2. Quart pheasant or chicken and marinate in sauce for several hours or overnight. Place in shallow casserole dish and cover with foil.

  3. Bake in 350 degree oven for 1 1/2 hours or until tender; basting occasionally with remaining marinade.
