Ingredients
- 1 medium red onion, halved and thinly sliced
- 1/2-3/4 cup red wine vinegar
- 1 lb. ground turkey
- 1/4 cup finely chopped parsley
- 1/3 cup diced, roasted red peppers
- 2 garlic cloves, minced or finely grated
- 1 tbsp. olive oil
- 1/2 tsp. sea salt
- 1/4 tsp. black pepper
- 8 tomato slices
- 8 leaves of green-leaf lettuce
Directions

Place the sliced onions in a bowl. Pour in the vinegar, using as much as is needed to cover the onions. Set aside for 20 minutes to 1 hour, stirring occasionally.

In a large bowl, combine the turkey, parsley, peppers, garlic, olive oil, salt and pepper. Mix just enough to combine. Form into 8 patties.

Heat a grill to medium-high heat. Oil the grill grates. Grill the sliders for about 3 minutes per side, or until cooked throughout. Transfer to a plate and let rest for 5-10 minutes.

Drain the onions from the vinegar. To serve the sliders, top a tomato slice with a leaf of lettuce, followed by a slider, some marinated onions and a sprinkle of parsley to garnish. Serve immediately.q
