Ingredients
- 1 cup seeded and diced Roma tomatoes
- 1/4 cup diced red onion
- 2 tbsp. chopped fresh cilantro
- 2 tbsp. seeded and minced jalapeno
- 1 tsp. minced lime zest
- 1 tbsp. fresh lime juice
- 1/2 tsp. minced fresh garlic
- Salt and black pepper to taste
- 1 cup sour cream
- 1 tbsp. minced chipotle in adobo sauce
- 1 1/2 tsp. adobo sauce
- 1/2 tsp minced lime zest
- 1 tsp. fresh lime juice
- 8 hot dogs, grilled
- 8 hot dog buns, toasted
- Shredded lettuce, pickled jalapenos, shredded Cheddar, crushed Doritos or Fritos, and diced avocado

For the pico, combine tomatoes, onion, cilantro, minced jalapeno, 1 tsp. zest, 1 tbsp. lime juice, and garlic; season with salt and pepper and chill until ready to serve.

For the sour cream, whisk together sour cream, chipotles, adobo sauce, 1/2 tsp. zest, and 1 tsp. lime juice; season with salt and pepper and chill until ready to serve.

Serve hot dogs in buns topped with lettuce, pico de gallo, sour cream, pickled jalapenos, cheese, chips and avocado.
