Nacho Dogs with Pico de Gallo and Chipotle Sour Cream

Ingredients

  • 1 cup seeded and diced Roma tomatoes
  • 1/4 cup diced red onion
  • 2 tbsp. chopped fresh cilantro
  • 2 tbsp. seeded and minced jalapeno
  • 1 tsp. minced lime zest
  • 1 tbsp. fresh lime juice
  • 1/2 tsp. minced fresh garlic
  • Salt and black pepper to taste
  • 1 cup sour cream
  • 1 tbsp. minced chipotle in adobo sauce
  • 1 1/2 tsp. adobo sauce
  • 1/2 tsp minced lime zest
  • 1 tsp. fresh lime juice
  • 8 hot dogs, grilled
  • 8 hot dog buns, toasted
  • Shredded lettuce, pickled jalapenos, shredded Cheddar, crushed Doritos or Fritos, and diced avocado

Directions

  1. For the pico, combine tomatoes, onion, cilantro, minced jalapeno, 1 tsp. zest, 1 tbsp. lime juice, and garlic; season with salt and pepper and chill until ready to serve.

  2. For the sour cream, whisk together sour cream, chipotles, adobo sauce, 1/2 tsp. zest, and 1 tsp. lime juice; season with salt and pepper and chill until ready to serve.

  3. Serve hot dogs in buns topped with lettuce, pico de gallo, sour cream, pickled jalapenos, cheese, chips and avocado.
