Lentil-Barley Stew

Ingredients

  • 1/4 c. margarine
  • 3/4 c. chopped celery
  • 3/4 c. chopped onion
  • 6 c. water
  • 3/4 c. lentils
  • 1 qt. tomatoes, canned
  • 3/4 c. barley or brown rice
  • 2 tsp. salt
  • 1/4 t. pepper
  • 1/2 t. rosemary
  • 1/2 t. garlic salt
  • 1/2 c. shredded carrots

Directions

  1. Saute in large pan: 1/4 c. margarine, 3/4 c. chopped celery, 3/4 c. chopped onion

  2. Add: 6 c. water, 3/4 c. lentils

  3. Cook 20 minutes.

  4. Add:1 qt. tomatoes, canned, 3/4 c. barley or brown rice, 2 tsp. salt, 1/4 t. pepper, 1/2 t. rosemary, 1/2 t. garlic salt

  5. Simmer 45-60 min.

  6. Add: 1/2 c. shredded carrots

  7. Cook 5 minutes and serve
