Lentil-Barley Stew

Ingredients
- 1/4 c. margarine
- 3/4 c. chopped celery
- 3/4 c. chopped onion
- 6 c. water
- 3/4 c. lentils
- 1 qt. tomatoes, canned
- 3/4 c. barley or brown rice
- 2 tsp. salt
- 1/4 t. pepper
- 1/2 t. rosemary
- 1/2 t. garlic salt
- 1/2 c. shredded carrots
Directions

Saute in large pan: 1/4 c. margarine, 3/4 c. chopped celery, 3/4 c. chopped onion

Add: 6 c. water, 3/4 c. lentils

Cook 20 minutes.

Add:1 qt. tomatoes, canned, 3/4 c. barley or brown rice, 2 tsp. salt, 1/4 t. pepper, 1/2 t. rosemary, 1/2 t. garlic salt

Simmer 45-60 min.

Add: 1/2 c. shredded carrots

Cook 5 minutes and serve
