Italian Pasta Salad with Garlic-Oregano Vinaigrette

Ingredients

  • 12 oz. dry gemelli pasta
  • 2 cups seeded, chopped cucumbers
  • 2 cups halved cherry tomatoes
  • 1 1/2 cups halved marinated green olives
  • 1 cup shredded Pecorino Romano
  • 1/3 cup diced red onion
  • 1/2 cup white wine vinegar
  • 1/3 cup olive oil
  • 2 tbsp. chopped fresh oregano
  • 2 tsp. minced fresh garlic
  • 1 1/2 tsp. kosher salt
  • 1 tsp. black pepper
  • 1/2 tsp. honey

Directions

  1. For the salad, cook gemelli in a pot of boiling salted water as directed; drain, rinse with cold water, then drain again. Transfer pasta to a large bowl; add cucumbers, tomatoes, Pecorino and onion.

  2. For the vinaigrette, whisk together vinegar, oil, oregano, garlic, salt, pepper and honey; toss with pasta.
