Ingredients
- 12 oz. dry gemelli pasta
- 2 cups seeded, chopped cucumbers
- 2 cups halved cherry tomatoes
- 1 1/2 cups halved marinated green olives
- 1 cup shredded Pecorino Romano
- 1/3 cup diced red onion
- 1/2 cup white wine vinegar
- 1/3 cup olive oil
- 2 tbsp. chopped fresh oregano
- 2 tsp. minced fresh garlic
- 1 1/2 tsp. kosher salt
- 1 tsp. black pepper
- 1/2 tsp. honey

For the salad, cook gemelli in a pot of boiling salted water as directed; drain, rinse with cold water, then drain again. Transfer pasta to a large bowl; add cucumbers, tomatoes, Pecorino and onion.

For the vinaigrette, whisk together vinegar, oil, oregano, garlic, salt, pepper and honey; toss with pasta.
