Grilled Fruit Salad with Grilled Pound Cake

Ingredients

  • 3 fresh pineapple rings, 1/2-inch thick
  • 2 mangoes, peeled, halved and pitted
  • 2 peaches, cut into wedges
  • 1 pkg. pound cake, cut into 10 slices
  • 1 lb. strawberries, hulled and quartered
  • 5 kiwis, peeled and chopped
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • Minced zest of 1 lime

Directions

  1. Preheat grill to medium. Brush grill grate with oil.

  2. For the salad, grill pineapple, mangoes, and peaches until grill marks appear, about 2 minutes per side. Once cooled, chop fruit into bite-sized pieces. Grill pound cake until lightly charred, 1-2 minutes per side.

  3. Combine grilled fruit, strawberries and kiwis in a bowl.

  4. For the dressing, whisk together honey, lime juice and zest; toss with fruit to coat. Serve fruit salad over pound cake.
