Chicken Ole Foil Supper

Ingredients

  • 15 oz. can black beans, rinsed and drained
  • 2 cups fresh or frozen corn, thawed
  • 1 cup salsa
  • 4 chicken breast halves
  • 1/4 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 1/8 tsp. salt
  • 1 cup shredded Cheddar
  • 2 green onions, chopped

Directions

  1. Mix beans, corn and salsa; divide blend among four 8×12-inch. pieces of heavy-duty foil. Top with chicken. Mix seasoning; sprinkle over chicken. Top with bean mixture. Fold foil over chicken, sealing tightly.

  2. Grill packets, covered, over medium heat until cooked though, 15-20 minutes. Open foil carefully to allow steam to escape. Sprinkle with cheese and green onions.
