Ingredients
- 3 tbsp. olive oil
- 1 cup chopped onion
- 1 cup chopped carrot
- 4 garlic cloves, minced
- 1 cup drained canned chickpeas
- 3/4 cup water
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 8 oz. penne, cooked
- 1/4 cup chopped parsley
- 1/4 cup chopped basil
Directions

Heat olive oil in a skillet over medium. Add onion, carrot and garlic; cook 8 minutes. Place onion mixture, chickpeas, water, salt and pepper in a blender; process until smooth. Toss with cooked pasta; sprinkle with parsley and basil.
