Pasta with Chickpea Sauce

Ingredients

  • 3 tbsp. olive oil
  • 1 cup chopped onion
  • 1 cup chopped carrot
  • 4 garlic cloves, minced
  • 1 cup drained canned chickpeas
  • 3/4 cup water
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 8 oz. penne, cooked
  • 1/4 cup chopped parsley
  • 1/4 cup chopped basil

Directions

  1. Heat olive oil in a skillet over medium. Add onion, carrot and garlic; cook 8 minutes. Place onion mixture, chickpeas, water, salt and pepper in a blender; process until smooth. Toss with cooked pasta; sprinkle with parsley and basil.
