Ingredients
- 15 oz. can unsalted chickpeas, drained and rinsed
- 1/4 cup celery, diced
- 1/4 cup dill pickle, diced
- 1/4 cup canola mayo
- 2 tbsp. red onion, minced
- 1 1/2 tsp. fresh lemon juice
- 1/4 tsp. kosher salt
- 1/4 tsp. black pepper
- 3 slices whole-grain bakery bread, toasted
Directions

Place chickpeas in a bowl; coarsely mash. Stir in celery, dill pickle, mayo, red onion, lemon juice, salt and pepper. Spread about 2/3 cup chickpea salad onto each bread slice.
