Ingredients
- 1 1/2 cups halved multicolored cherry tomatoes
- 1 cup canned unsalted chickpeas, drained and rinsed
- 1 cup cucumber, cut into half-moons
- 1/3 cup coarsely chopped parsley
- 1/4 cup red onion, slivered
- 2 tbsp. olive oil
- 1 1/2 tbsp. fresh lemon juice
- 1/2 tsp. black pepper
- 3/8 tsp. kosher salt
Directions

Combine tomatoes, chickpeas, cucumbers, parsley, red onion, olive oil, lemon juice, salt and pepper. Toss gently to combine.
