Barbecued Bologna

Ingredients

  • 1 4 lb. bologna roll
  • Whole cloves
  • 1 cup firmly packed light brown sugar
  • 2 Tbsp. prepared mustard
  • 3 Tbsp. vinegar
  • 1 tsp. grated orange rind

Directions

  1. Remove plastic casing from bologna. Score meat in diamond shapes. Stick whole cloves in meat at intervals. Place on spit and cook on rotisserie at 350 degrees for 30 minutes.

  2. Combine sugar, mustard, vinegar and orange rind. At end of 30 minutes cooking period, baste bologna, then again every 10 to 15 minutes for 30 minutes more, using up all the sauce.
