Barbecued Breast of Lamb

Ingredients

  • 2 lb. breast of lamb
  • 1 cup red wine
  • 2 Tbsp. olive oil
  • 1/4 tsp. thyme
  • 1 bay leaf
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. Wipe lamb with a damp paper towel. Place lamb in a shallow baking dish. Set aside.

  2. Combine remaining ingredients in a bowl. Mix well. Pour evenly over lamb. Cover and let marinate in refrigerator overnight, turning several times.

  3. Drain lamb, reserve marinade. Place on greased grill, 6 inches from hot coals. Barbecue 30- to 40 minutes, basting with marinade and turning frequently until done.
