Squash Casserole/Paula Deen

Ingredients

  • Squash-yellow/zucchini or both (all yellow is too watery)
  • Sprinkle of matchstick carrots for color
  • 1-onion diced
  • 1-2 clove garlics-finely minced
  • oil to saute squash and onion
  • 1/2 C-3/4 C sour cream
  • 1 C shredded cheese-sharp cheddar is good
  • 1 C Ritz crackers/ finely crushed
  • butter to dot top of casserole and to butter casserole dish

Directions

  1. Saute onion and when almost done add carrots and garlic

  2. Remove from skillet

  3. Saute squash until fairly soft using least amount of oil possible-I use Teflon coated skillet

  4. Slightly mash squash

  5. In bowl combine all ingredients except cracker crumbs

  6. Turn into buttered casserole dish

  7. Top with crackers-

  8. Dot with butter

  9. Bake 25-30 minutes without cover
