(from Lucianolinda’s recipe box)
The eggs are commonly available from street vendors in Thailand. A charcoal grill will give them a nice smoke flavor.

Ingredients
- 6 eggs
- 2 Tbsp. light soy sauce
- 1/2 tsp. black pepper
- 1 Tbsp. fish sauce
- 1 Tbsp. spring onion
- Wooden skewers for barbecuing
- Small funnel
Directions
-
Clean the eggs on the outside. Break a small hole in one end, approximately 3/5 inch in diameter.
-
Empty the eggs from the shells onto a plate. Don’t worry about breaking the yolk. Mix the eggs with the light soy sauce and fish sauce and black pepper.
-
Refill the shells with the seasoned egg mixture, using the funnel. Stack the eggs upright and steam for 8 minutes.
-
Now, poke a wooden skewer clear through the egg so it comes out the other end. You can get 3 eggs on each skewer.
-
Place the skewered eggs on a grill and barbecue for 10 minutes.
-
Serve with sweet chili sauce and lettuce.
