Barbecued Ham

Ingredients

  • 6 slices boiled ham
  • 2 Tbsp. butter
  • 1 Tbsp. vinegar
  • 1/4 tsp. dry mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp paprika
  • Ham Sauce:
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 4 Tbsp. dry mustard
  • salt to taste
  • 3 egg yolks, beaten
  • 1 pint cream

Directions

  1. Brown ham in butter in skillet, then push to one side.

  2. Blend remaining ingredients into butter in skillet.

  3. Place ham in vinegar mixture and cook for 2 minutes. Serve hot over crisp, buttered toast.

  4. Ham Sauce:

  5. heat vinegar in a saucepan and stir in dry ingredients. Stir into egg yolks slowly, then return to saucepan. nAdd the cream aqnd cook over low heat until thickened.
