Ingredients
- 6 slices boiled ham
- 2 Tbsp. butter
- 1 Tbsp. vinegar
- 1/4 tsp. dry mustard
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp paprika
- Ham Sauce:
- 1/2 cup vinegar
- 1/2 cup sugar
- 4 Tbsp. dry mustard
- salt to taste
- 3 egg yolks, beaten
- 1 pint cream
Directions

Brown ham in butter in skillet, then push to one side.

Blend remaining ingredients into butter in skillet.

Place ham in vinegar mixture and cook for 2 minutes. Serve hot over crisp, buttered toast.

Ham Sauce:

heat vinegar in a saucepan and stir in dry ingredients. Stir into egg yolks slowly, then return to saucepan. nAdd the cream aqnd cook over low heat until thickened.
