Ingredients
- 1 cup Boiled Quinoa
- 1 cup Boiled sweet potatoes
- 1 cup Black Beans
- 1/2 cup Frozen Corn Kernels
- 1 cup Gluten-free Oats flour
- 1 small onion chopped
- 1.5 teaspoon Chili powder (adjust according to taste)
- 1/2 teaspoon Paprika
- 1 teaspoon Coarsely crushed black peppercorns
- 2 tablespoon Lemon Juice
- 3 tablespoon Cilantro leaves
- 1 tablespoon Crushed Garlic or Garlic powder (optional)
- Salt to taste
- 2-3 tablespoon Oil to cook patties
Directions

Assemble ingredients and spices.

Combine water and quinoa in a pan. Bring it to a boil.

Cover and let it simmer on low heat for 12- 15 minutes.

Uncover the quinoa and fluff it with a fork to carefully separate the cooked grains.

Measure oats flour.

Toss everything in a food processor/blender leaving out quinoa and oats flour.

Pulse until smooth.

Mix in quinoa and add oats flour and mix it well. Adjust seasonings to taste.

Shape into patties.

Lightly oil a skillet and cook the patties on a medium heat.

Flip the patties with a spatula and continue to cook until crunchy and crispy.
