Ingredients
- 2 1/4 cups sifted cake flour
- 2 tsp baking powder
- 3/4 tsp. salt
- 1 cup granulated sugar
- 1/4 cup soft shortening
- 1/4 cup soft butter
- 1/2 cup milk
- 1 1/2 tsp. vanilla or 1 Tbsp. grated orange or lemon rind
- 5 egg yolks, unbeaten
- 1/4 cup milk
Directions

Set oven at 350 degrees. Grease, and line with wax paper, bottom of 10 × 5 × 3 loaf pan, or 2 smaller ones.

Sift into large mixing bowl, sifted flour, baking powder, salt and sugar. Add shortening and butter (or 1/2 cup of either one you chose), 1/2 cup milk, flavoring and egg yolks. Beat on low speed 1/2 minute to moisten flour mixture, then on medium speed for 2 minutes. Scrape bowl as needed. Add 1/4 cup milk. Beat 1 1/2 minutes longer. Turn into pan.

Bake about 1 hour or until done. Sift confectioners’ sugar thickly into crack on top of cake or frost with lemon or chocolate frosting.

Pound Cake: Sift 1/2 tsp. mace or 1 tsp. nutmeg with flour mixture, using vanilla as flavoring.

Nut loaf: Add 1 cup finely chopped nuts when adding the 1/4 cup milk.

Chocolate Speckled Loaf: Grate 1/8 lb. sweet baking chocolate. Beat in last.

Marble Loaf Cake: Follow ingredients for Basic Loaf Cake, using all shortening, omit egg yolks, use 3 egg whites instead, adding in last mixing. Use only 2/3 cup milk adding it all in first mixture.

Put half of batter into small mixer bowl; add 1 square melted chocolate, 1/4 tsp. soda dissolved in 2 Tbsp. hot water, 1 Tbsp. sugar. Beat on low speed only until blended.

Alternate spoonfuls of batter in pan. Cut through with a knife to marbleize. Bake.

Note: fill pans only 1/2 full- these cakes double in volume.
