Ingredients
- 1 mango, peeled, pitted, and diced
- 2 plum tomatoes, diced
- 1/4 cup diced fresh cilantro
- 1 jalapeno chile pepper, seeded and finely chopped (wear plastic gloves when handling)
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 2 cloves garlic, minced
- 1 1/2 teaspoons chipotle seasoning
- 1 1/4 pounds trimmed pork tenderloin
- 1 tablespoon olive oil
- 8 soft corn tortillas (6" diameter)
- 1 cup shredded lettuce
Directions
- In a bowl, stir together the mango, tomatoes, cilantro, and pepper. Set aside.
- Coat a grill rack with cooking spray. Heat the grill to medium.
- In a cup, mix the paprika, salt, garlic, and chipotle seasoning. Rub all over the pork and drizzle with the oil.
- Grill the pork for 25 minutes, turning occasionally, or until a thermometer inserted in the center reaches 145F and the juices run clear. Let stand for 10 minutes before slicing. Cut the pork into thin slices.
- Stack the tortillas and wrap them in foil.
- Place the tortillas on a cool corner of the grill to warm for 10 minutes.
- Place the tortillas on a work surface. Arrange pork in the center of each tortilla. Top with lettuce and salsa.
