Ingredients
- 1/4 cup packed turbinado or light brown sugar
- 1/4 cup coarse salt
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 3 full racks beef ribs (8 pounds total)
- 1 cup lager beer
Directions
- Preheat the oven to 300°F.
- In a small bowl, combine the brown sugar, salt, chili powder, cumin, black pepper, and cayenne. Rub the mixture all over the ribs.
- Pour the beer into a large roasting pan. Add the ribs and cover tightly with foil. Bake for 3 hours, or until the ribs are very tender.
- Preheat the grill to medium. Grill the ribs for 15 to 20 minutes, turning once, or until crisped and heated through.
