Ingredients
- 12 oz. roasted red peppers
- 1 cup 1/2-in. bread cubes
- 1 cup sunflower seeds
- 1/3 cup olive oil
- 1 1/2 tsp. red wine vinegar
- 1 garlic clove
- 1 lb. rigatoni
- Chopped fresh parsley
- Grated Parmesan

In food processor, puree peppers, bread, sunflower seeds, olive oil, vinegar and garlic; season. In large pot of boiling, salted water, cook pasta; drain, reserving 1/2 cup cooking water. In pot, stir pasta and sauce over low, adding cooking water if too dry. Season; garnish with parsley and parmesan.
