Ingredients
- 1/4 cup light brown sugar
- 1 lime, zested
- 2 watermelon slices, cut from the center of the melon
- 1/2 cup Greek yogurt (plain or vanilla)
- 1/4 cup fresh blueberries
- 1/4 cup coconut chips, toasted
- Fresh mint leaves, torn if large, for garnish

Prepare a grill for medium-high heat. In a small bowl, mix the sugar and lime zest. Rub the mixture over both sides of the watermelon. Grill the watermelon slices until lightly charred in spots, 2-3 minutes per side. Transfer to a cutting board.

Dollop the yogurt over the watermelon, then spread, leaving a 1-inch border. Top with the blueberries, coconut chips and mint leaves. Cut into wedges and serve.
