Grilled Watermelon “Pizza”

Ingredients

  • 1/4 cup light brown sugar
  • 1 lime, zested
  • 2 watermelon slices, cut from the center of the melon
  • 1/2 cup Greek yogurt (plain or vanilla)
  • 1/4 cup fresh blueberries
  • 1/4 cup coconut chips, toasted
  • Fresh mint leaves, torn if large, for garnish

Directions

  1. Prepare a grill for medium-high heat. In a small bowl, mix the sugar and lime zest. Rub the mixture over both sides of the watermelon. Grill the watermelon slices until lightly charred in spots, 2-3 minutes per side. Transfer to a cutting board.

  2. Dollop the yogurt over the watermelon, then spread, leaving a 1-inch border. Top with the blueberries, coconut chips and mint leaves. Cut into wedges and serve.
