Basic Pancakes with Variations

Ingredients

  • 1 egg
  • 1 1/4 cups buttermilk or sour cream
  • 1/2 tsp. baking soda
  • 1 1/4 cups sifted flour
  • 1 tsp. sugar
  • 2 Tbsp. soft shortening
  • 1 tsp. baking powder
  • 1/2 tsp. salt

Directions

  1. Beat egg well. Beat in buttermilk and soda. Then beat in remaining ingredients. Continue beating until smooth. Bake pancakes on heated Griddle.

  2. Variations:

  3. Apple Pancakes: Stir 1 apple, peeled and thinly sliced into the batter.

  4. Blueberry Pancakes; Stir 1/2 cup of fresh or drained canned blueberries into batter.

  5. Nut Pancakes: Add 1/4 cup of chopped or broken nuts to batter.

  6. Cheese Pancakes: Stir 1/2 cup of shredded cheddar cheese into batter.
