Ingredients
- 1 egg
- 1 1/4 cups buttermilk or sour cream
- 1/2 tsp. baking soda
- 1 1/4 cups sifted flour
- 1 tsp. sugar
- 2 Tbsp. soft shortening
- 1 tsp. baking powder
- 1/2 tsp. salt
Directions

Beat egg well. Beat in buttermilk and soda. Then beat in remaining ingredients. Continue beating until smooth. Bake pancakes on heated Griddle.

Variations:

Apple Pancakes: Stir 1 apple, peeled and thinly sliced into the batter.

Blueberry Pancakes; Stir 1/2 cup of fresh or drained canned blueberries into batter.

Nut Pancakes: Add 1/4 cup of chopped or broken nuts to batter.

Cheese Pancakes: Stir 1/2 cup of shredded cheddar cheese into batter.
