Basic Pie Dough

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tsp. sugar
  • 3/4 tsp. salt
  • 11 Tbsp. cold unsalted butter, cut into small pieces
  • 2 1/2 Tbsp. cold solid vegetable shortening
  • 5 Tbsp. cold water, plus more as needed

Directions

  1. Combine flour, sugar, salt, butter and shortening in a food processor or in mixing bowl.

  2. Pulse machine on and off (OR cut ingredients together with 2 knives) until mixture is crumbly.

  3. Add water and pulse (or toss with a folk) until mixture begins to clump. Gather into a ball, sprinkling with a few more drops of water, if needed.

  4. Flatten slightly into a disk, wrap in plastic wrap and chill at least 30 minutes before rolling out.

  5. Makes dough for 2- 9 1/2-inch or 10-inch pie.
