Ingredients
- 1/2 cup rolled oats
- 1 tablespoon chia seeds
- 1/2 cup Greek yogurt
- 1/2 cup milk
- Pinch of salt
- 1/4 teaspoon ground cinnamon
- 2 tablespoons packed brown sugar
- 1/2 cup shredded zucchini
- 2 tablespoons cream cheese, at room temperature
- 1/2 teaspoon vanilla extract
- Toppings
- Any additional toppings desired, such as granola, toasted nuts, and additional shredded or sliced zucchini.
Directions
- Combine all ingredients in a medium bowl and whisk together. Transfer to a jar with a lid and refrigerate for at least 6 hours or overnight.
