Ingredients
- 1/3 cup red wine vinegar
- 1/2 tsp. Dijon mustard
- 1/4 tsp. fresh ground pepper
- 1/4 tsp. salt
- 1 cup olive oil
Directions

In a medium non-metallic bowl, glass or measuring cup, mix vinegar, mustard, salt and pepper. Whisk olive oil in gradually to blend.

Variations:

Herb: add 1/4 cup chopped parsley, dill, basil, or oregano or thyme or a combination of herbs to the basic recipe. Whisk to blend.

Garlic: Add 1 clove finely minced garlic to the master recipe.

Lemon Juice- substitute 1/4 cup fresh lemon juice plus 1 tsp. grated lemon zest for red wine vinegar. Proceed with the master recipe.

Mustard: Add 2 tsp. Dijon mustard.
