Serves 6 people
Ingredients
- 1 cup bulgur
- 1 1/2 tsp salt
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 2 cloves garlic, crushed
- black pepper, to taste
- 2 1/2 cups chopped parsley (2 small bunches)
- 1/2 cup minced onion (or scallions)
- 10-15 fresh mint leaves (1 to 2 Tbs dried)
- 2 medium tomatoes, diced
- 1 medium bell pepper, diced
- 1 small cucumber, diced

Combine bulgur and 1 1/2 cups boiling water. Cover, and let sit for 30 minutes.

Combine with remaining ingredients
