Serves 6 people

Ingredients

  • 1 cup bulgur
  • 1 1/2 tsp salt
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic, crushed
  • black pepper, to taste
  • 2 1/2 cups chopped parsley (2 small bunches)
  • 1/2 cup minced onion (or scallions)
  • 10-15 fresh mint leaves (1 to 2 Tbs dried)
  • 2 medium tomatoes, diced
  • 1 medium bell pepper, diced
  • 1 small cucumber, diced

Directions

  1. Combine bulgur and 1 1/2 cups boiling water. Cover, and let sit for 30 minutes.

  2. Combine with remaining ingredients
