- 2 lbs potatoes, cut into bite-sized wedges
- 2 cups chopped onions
- 4 cloves garlic, pressed or minced
- 2 tsp olive oil
- 2 tsp chili powder
- 1 cup undrained canned whole or diced tomatoes
- 2 tbs chooped parsley
- salt and pepper to taste
