Basil, Roasted Cauliflower and Leeks

Ingredients
- 1/2 head cauliflower, cut into florets
- 2 leeks, cut into chunks
- 1/2 red onion, cut into chunks
- 1 tsp. sugar
- 3 Tbsp. balsamic vinegar
- 1 Tbsp. olive oil
- 1/4 cup chopped fresh basil
- salt and freshly ground pepper to taste
Directions

Place all vegetables into a clay roaster or glass baking dish.

Whisk together remaining ingredients in a small bowl; pour over vegetables. Toss to coat.

Bake tightly covered at 250 degrees 30 to 40 minutes, or until vegetables are tender, stirring and basting once after 15 to 20 minutes.
