Ingredients
- 3 C flour
- 1 t baking soda
- 1 t salt
- 1 t cinnamon
- 1/2 t nutmeg
- 3 eggs
- 2 C white sugar
- 1 1/4 C canola oil
- 2 t vanilla extract
- 1 1/2 C mashed bananas (3 ripe bananas)
- 1-8 ounce can crushed pineapple, drained
- 1 C walnuts
- FROSTING RECIPE
- 12 ounce cream cheese
- 1 1/2 C softened butter
- 1 1/2 -2 t vanilla extract
- LEMON ZEST and juice of 1 medium lemon
- 3 pound confectioners sugar
- 3/4 -1 C finely ground walnuts
Directions

Oven 350 Bake 3 layers about 25-30 minutes

Grease and flour 3 cake pans

Sift together flour, baking soda, salt cinnamon and nutmeg

In mixing bowl beat eggs

Add sugar, oil, and vanilla

Add bananas, pineapple and nuts

Gradually add dry ingredients

Pour into cake tins

Bake 25-30 minutes

Let cool 5-10 minutes

Remove from tin

Let completely cool

FROSTIING
-
Mix together cream cheese, butter and vanilla

Then add confectioners sugar

Add finely ground walnuts
-
Spread frosting between layers
