Hummingbird cake/Magazine

Ingredients

  • 3 C flour
  • 1 t baking soda
  • 1 t salt
  • 1 t cinnamon
  • 1/2 t nutmeg
  • 3 eggs
  • 2 C white sugar
  • 1 1/4 C canola oil
  • 2 t vanilla extract
  • 1 1/2 C mashed bananas (3 ripe bananas)
  • 1-8 ounce can crushed pineapple, drained
  • 1 C walnuts
  • FROSTING RECIPE
  • 12 ounce cream cheese
  • 1 1/2 C softened butter
  • 1 1/2 -2 t vanilla extract
  • LEMON ZEST and juice of 1 medium lemon
  • 3 pound confectioners sugar
  • 3/4 -1 C finely ground walnuts

Directions

  1. Oven 350 Bake 3 layers about 25-30 minutes

  2. Grease and flour 3 cake pans

  3. Sift together flour, baking soda, salt cinnamon and nutmeg

  4. In mixing bowl beat eggs

  5. Add sugar, oil, and vanilla

  6. Add bananas, pineapple and nuts

  7. Gradually add dry ingredients

  8. Pour into cake tins

  9. Bake 25-30 minutes

  10. Let cool 5-10 minutes

  11. Remove from tin

  12. Let completely cool

  13. FROSTIING

  14. Mix together cream cheese, butter and vanilla

  15. Then add confectioners sugar

  16. Add finely ground walnuts

  17. Spread frosting between layers
