Ingredients
- 3 lbs. ground beef
- 1 tbsp. salt
- 1 1/2 tsp black pepper
- 2 large Roma tomatoes
- 1 tsp olive oil, plus more for grilling
- 1 pineapple, peeled, cored and cut into rings
- 6 slices cheddar cheese
- 3 thick slices deli ham, halved crosswise
- Butter, for the rolls
- 6 Kaiser rolls or burger buns, split
- 1/2 red onion, very thinly sliced
- Lettuce, for topping
- Potato chips, for serving
Directions
-
Heat a grill to medium high. Mix the ground beef in a large bowl with 2 tsp salt and pepper. Form the mixture into 6 equal patties.
-
Halve the tomatoes lengthwise and toss with the olive oil and the remaining 1 tsp salt.
-
Brush the grill grates with olive oil. Place the tomatoes and pineapple slices on the grill and cook until softened and grill marks form, 5-6 minutes per side.
-
Meanwhile, grill the beef patties until marked, 4-5 minutes, then flip and cook 2-3 minutes longer.
-
Top each burger with a slice each of cheddar and ham and cook until the cheese melts, 2-3 minutes longer.
-
Butter the rolls and grill them until golden brown and marked, 1-2 minutes. Chop the grill tomatoes and spread on both sides of each roll. Top with the burgers, a few red onion slices, some lettuce and grilled pineapple, then bring all the craziness together. Serve with chips.
