Ingredients

  • 3 lbs. ground beef
  • 1 tbsp. salt
  • 1 1/2 tsp black pepper
  • 2 large Roma tomatoes
  • 1 tsp olive oil, plus more for grilling
  • 1 pineapple, peeled, cored and cut into rings
  • 6 slices cheddar cheese
  • 3 thick slices deli ham, halved crosswise
  • Butter, for the rolls
  • 6 Kaiser rolls or burger buns, split
  • 1/2 red onion, very thinly sliced
  • Lettuce, for topping
  • Potato chips, for serving

Directions

  1. Heat a grill to medium high. Mix the ground beef in a large bowl with 2 tsp salt and pepper. Form the mixture into 6 equal patties.

  2. Halve the tomatoes lengthwise and toss with the olive oil and the remaining 1 tsp salt.

  3. Brush the grill grates with olive oil. Place the tomatoes and pineapple slices on the grill and cook until softened and grill marks form, 5-6 minutes per side.

  4. Meanwhile, grill the beef patties until marked, 4-5 minutes, then flip and cook 2-3 minutes longer.

  5. Top each burger with a slice each of cheddar and ham and cook until the cheese melts, 2-3 minutes longer.

  6. Butter the rolls and grill them until golden brown and marked, 1-2 minutes. Chop the grill tomatoes and spread on both sides of each roll. Top with the burgers, a few red onion slices, some lettuce and grilled pineapple, then bring all the craziness together. Serve with chips.
