Blackberry Cobbler

Ingredients

  • CRUST AND TOPPING
  • 3 C flour
  • 1 1/2 C sugar
  • 1/4 t salt
  • 1 1/2 C (3 sticks) butter
  • FILLING
  • 4 eggs
  • 2 C sugar
  • 1 C sour cream
  • 3/4 C flour
  • Dash salt
  • 1 t almond extract
  • 2-16 ounce packages frozen blackberries, thawed and drained

Directions

  1. For Crust and topping:

  2. Heat oven 350 degrees

  3. Combine dry ingredients

  4. Cut butter into 1/2 inch cut to bowl and MIX with mixer until crumbly

  5. RESERVE 1 1/2 C

  6. mixture for topping
  7. Press remaining mixture into 9X13 pan

  8. Bake 12-15 minutes

  9. Allow to cool at least 10 minutes

  10. FILLING

  11. Whisk together eggs, sugar, sour cream flour salt, almond extract

  12. Gently fold in blackberries

  13. Spoon reserved topping over filling

  14. Return to oven and bake 45-50 minutes
